Romesco is a Spanish condiment and sauce that is wonderful as a tapenade with crusty bread, as a flavorful addition to grilled chicken or fish, and excellent on pasta and rice. It is a vegetarian sauce made from toasted almonds, roast garlic, roasted red peppers, along with spices, olive oil, and sherry vinegar.
Romesco has a three-week shelf life and is only made once a year in October.
